Today is the first Sunday of August.. a day dedicated to all our friends - yes it is Friendship Day ! Friends hold very special place in every ones life and I am no exception to it. Let it be friends made during our school or college days or in our workplace or Neighbourhood, all have touched our lives in some or the other way and this day is to express and celebrate friendship.
The first thing which come into my mind when I think of this day, is the school and college memories of Friendship day. The wrists full of colorful satin ribbons and friendship bands , a Sunday full of fun and masti with friends, the cute little teddies , cards, Chocolates and much more !! Today we have grown up and so have changed our way of expressing and celebrating this day. Try out this super easy muffin recipe and greet your friends with home made Choco Muffins this Friendship day !
Baking is my new venture and after my moist carrot cake turned out well , I wanted to try Choco Muffins and I got this recipe at Rak's Kitchen. This Choco Muffins are Egg-less and dairy free. The recipe is very easy to follow and all the ingredients are easily available in our kitchen pantry. The use of whole wheat flour instead of maida and oil instead of butter makes it all the more healthier. I have used Orange zest ( the scrapping of outer skin of Orange) in a Choco cake for the first time and the combo makes the muffins very flavorful and taste heavenly. I have baked the muffins in a Convection Microwave.
Ingredients: (1 cup = 250 ml)
- Whole Wheat flour - 3/4 cup
- Coco Powder - 2 1/2 tsp
- Sugar - 1/2 cup
- Baking Soda - 1/2 tsp
- Salt - 1/4 tsp
- Oil - 1/4 cup
- Cold Water - 3/4 cup
- Orange Zest - 1 tsp(Optional)
- Lemon juice - 1 tsp
- Vanilla Essence - 1tsp
- Scrap the outer skin of an Orange with a scrapper or a sharp knife. Make sure you do not scrape the white part of the skin which is bitter in taste. Chop the scrapping and keep aside 1 tsp of it. Addition of Orange zest is optional, but its addition surely makes the muffins flavorful.
2. Sieve the whole Wheat flour, Coco powder and Baking Soda together to ensure even mixing. I generally sieve the flour thrice .
3. Add the Sugar and Salt to the sieved flour.
4. Mix well and keep this dry ingredients aside.
5. In another bowl mix the Oil, cold water( water from fridge) and Vanilla together. We will add the lemon juice and orange zest at the end. Now mix the wet ingredients with the dry ingredients and fold until the sugar mixes well. I have used fine granulated sugar which mixes fast and easily. The original recipe had 1/2 cup water. The batter was very thick in my case so I added 1/4 cup of water more. Even after addition of it, batter is not very thin. Do not worry.
6. Now add the reserved lemon juice and orange zest and fold gently to mix it evenly.
8. If the tooth pick is sticky, bake for 5 more minutes. Once done, carefully take out the muffins and keep them to cool on a wire rack.
9. Enjoy the chocolaty and moist choco muffins with your loved ones. The above measurements make 8 muffins. If you can resist eating these melt in mouth yummy muffins, save some for the next day as they taste more flavorful the following day as the fIavors blend more nicely.I came to know this, as my little one spared one ! If you want to do frosting (icing) let the muffins cool down completely.

heat oven to 190o C .. Before you are just going to bake, mix in the
lemon juice and stir well. Spoon the batter to the muffin liners in the
